This is the whole point of the board, so it's worth being clear. Two surfaces, two jobs, no cross-contamination.

Green or Blue — the colour is the rice husk side; the steel side is identical on both. Green is the more popular of the two and reads warmer against timber benchtops; blue is cooler and sits better with grey or white stone.

316 Steel Is the Detail Worth Knowing
Most stainless kitchenware is 304. This board uses 316 — the same grade specified for marine and medical use because it resists corrosion and pitting better. In a kitchen that means it shrugs off salt, acidic marinades and citrus without staining or dulling.
The rice husk fibre side is the eco-conscious half: lightweight, sturdy, and gentler on knife edges than steel, which is why it's the right surface for the chopping you do most. The integrated juice groove runs around the steel side to catch what comes off resting meat instead of letting it run onto the bench.
