How do I keep fleece soft instead of turning it into a bobbled mess?
Fleece is ruined by heat and by friction against rough fabrics, not by washing. Get those two things right and it stays plush far longer than most people expect.

Skip the fabric softener. Fleece does not need it, and the coating it leaves behind is what turns a soft towel into one that slides water around instead of picking it up. The step people skip is shaking the towel out before hanging, which lifts the pile back up as it dries.

A cotton towel that has been hanging in an unheated bathroom overnight is genuinely cold when it touches you. You brace for it. Fleece does not do that, because it holds a little air in the pile and comes off the rail at something closer to room temperature. Why fleece behaves differently from a terry towel
Terry dries you with loops of cotton that soak up water and hold it. Fleece works by surface contact: the dense, brushed pile wipes water off skin quickly rather than absorbing a large volume of it. The practical result is that a fleece towel feels like it dries you faster and lighter, and that it does not turn into a heavy, sodden thing halfway through. It is also why fleece is a better bathroom towel in a humid climate than a thick terry one, which spends all day damp.
The pile is the part that decides whether these last. A brushed fleece surface stays soft as long as it is not repeatedly heat-shocked in a hot dryer, which melts and mats the fibre ends. Wash cool, dry low, and the pile keeps standing up. That is essentially the entire maintenance requirement, and it is easier than what a cotton towel demands.
