How do I stop a bath mat going musty?
A bath mat does not smell because it got wet. It smells because it stayed wet. An absorbent mat left flat on a cold tiled floor in a room with the door shut has no way to dry out, and that is the whole problem.

Why the stripe is a construction detail, not a pattern choice

That does two useful things underfoot. The raised ribs are what your feet actually press into, so water gets squeezed off the sole and down the sides. And the channels between them give that water somewhere to go, away from the contact point, spread across a wider area of the mat.
A flat mat has to soak everything up at the exact spot you are standing, which is why it saturates in one shower and stays sodden. A ribbed surface distributes the load. It also has more surface area exposed to the air, so once you hang it up it dries faster than a flat mat of the same size — which loops straight back to the musty problem.
