Which length do I need for my table?
Measure your tabletop, then add about 16" to the length for a hand-width of overhang at each end. Every option except the smallest is 55" wide, so you are really just choosing how far it runs down the table.

If you are between two lengths, take the longer one. Extra overhang looks generous; a short cloth looks like a mistake.
Will the tassels survive a real dinner?
Yes, but they need to be kept off the floor and out of the tumble dryer. Those are the two things that wreck a tasselled cloth.

Wash it cool and gentle, then hang it to dry and comb the fringe straight with your fingers while it is still damp. That last part is the step everyone skips, and it is the whole difference between a tassel edge that looks deliberate and one that looks chewed. The tassels dry in whatever shape you leave them.
