Which colour resin should I pick?

The wood is the constant — the resin is the part that has to agree with your kitchen. Think about what is already on the counter, because this board will sit out rather than live in a drawer.

Can I actually cut on the resin?

Treat it as a board you serve from and prep lightly on, not the one you break down a chicken on. Resin holds knife marks in a way wood does not — wood closes up, resin keeps the scratch. Keep heavy chopping on the wood side of the board and this stays looking new.
