Won't bamboo split or go mouldy if it lives near steam?
It splits when it soaks and then dries fast, and it goes mouldy when it's put away damp — both of which are handling, not material. Treat it like a wooden chopping board and it will outlast most of your kitchen plastic.

Why bamboo, and why the slats matter
Bamboo is dense and hard for something that grows as fast as it does, which is why it survives being sat on by a hot cast iron pot without denting the way soft pine would. It also has low thermal conductivity — it doesn't pass heat through quickly — so the bench underneath stays cool while the top face takes the load.
The slatted construction is doing more work than it looks. Gaps between the slats let air move under the pot, so condensation doesn't pool between the pot base and the stand and leave you with a wet ring anyway. Those same gaps are what make it work as a steam rack: sitting in a pot above the water line, steam passes up through the openings and around whatever plate or bowl you've set on top. A solid disc of timber would do neither of those things well.
