Small, Large, or both?
Think about which board you would reach for on a Tuesday, not which one looks best in a photo. Most kitchens use a small board ten times more often than a big one — but the big one is the one you miss when it isn't there.
| Choose | If this sounds like you |
|---|---|
| Small | You are slicing a lemon, halving a bagel, chopping garlic. It lives out on the counter because it is quick to wipe and quick to put away, and it fits in a small sink. |
| Large | You break down a whole chicken, prep a full tray of vegetables, or want somewhere to put cheese and crackers when people come over. Room to push the chopped pile aside and keep going. |
| Set (Small + Large) | You cook for a household and want to keep raw meat off the board you use for everything else. This is the sensible answer if you have ever stopped mid-recipe to wash a board. |
If you already own one big board and it never leaves the counter, buy the Small.
How do I keep a board from warping or smelling?
Boards are almost never killed by chopping — they are killed by water. Soaking and slow drying are what cause a board to cup, split or hold onto onion.
| Works on | Avoid |
|---|---|
| Everyday chopping and slicing, resting a carved joint, serving cheese and bread, a base under a hot dish on the table | Leaving it to soak in the sink, standing it in a puddle, cleaver work meant for a butcher's block, drying it flat on a wet counter |
Wash by hand with hot soapy water, rinse, and stand it on edge to dry so air reaches both faces. The step people skip: drying both sides. A board dried flat has one wet face and one dry one, and that difference in moisture is exactly what pulls it into a curve.
For a lingering onion or garlic smell, scrub with coarse salt and a cut lemon, then rinse.
One board out on the counter, and the prep stops piling up in the sink.
The bottleneck in most home cooking is not the cooking. It is that you chopped an onion, then needed the board for chicken, so the board went in the sink and now you are drying it with a tea towel while the pan gets too hot. A board sized for the job — or a second one so you never have to stop — removes that whole interruption.

Size is the feature nobody thinks about hard enough
People choose boards on looks and then live with the consequences of the dimensions for a decade. Too small and everything you chop rolls off the edge, so you compensate by chopping slowly. Too large and it will not fit in the sink, will not fit in the drying rack, and consequently gets a quick wipe instead of a proper wash. The reason the Set exists is that neither size is wrong — they are answers to different tasks.
The clean-edged, low-profile shape here matters for a practical reason as well as a visual one: there is no routed groove or moulded lip to trap gunk, and nothing raised for a knife to catch on when you sweep chopped food off the end into a pan. It wipes down in a single pass, which is the actual reason a board stays in use rather than migrating to the back of a cupboard.
It also doubles as a serving surface without looking like kitchen equipment on the table, which is the argument for the Large even in a household that mostly chops small.
