Small or Large — which one do I reach for more?
Board size isn't about how much you cook, it's about whether the food stays on the board while you're cutting. Most people underestimate this and then chase onion off the bench.
| Choose | If this sounds like you |
|---|---|
| Small (34x22x1.2cm) | A lemon, a bit of cheese, a sandwich. Also the one for a small kitchen where a big board has nowhere to live between meals. |
| Large (38.5x25x1.5cm) | You break down a whole tray of vegetables in one go, or you want a board thick enough to sit still under a heavy knife. |
A lot of kitchens run both — the small one lives out on the bench, the large one comes out when dinner is a real job.
How do I keep a wooden board from splitting?
Solid wood fails from water, not from knives. Everything below is about not letting one face soak while the other stays dry.
| Works | Avoid |
|---|---|
| Hand wash with warm water and a little dish soap | The dishwasher — heat plus a long soak is what splits a solid board |
| Drying it straight away and standing it on edge | Leaving it flat on a wet bench, which soaks one face and warps it |
| Rubbing in food-safe mineral or board oil when it starts looking dry and pale | Cooking oils like olive or vegetable, which go rancid in the grain |
| Using both faces so wear is even | Long soaks in the sink, even short ones |
The step everyone skips: stand it on its edge to dry, not flat. A board dried flat only loses water from the top face, and that imbalance is exactly what makes it cup.
Your knives stop going blunt in three weeks.
Plastic and glass boards do two things badly. Glass and stone destroy an edge — a knife hitting a surface harder than its own steel rolls the edge over every single cut, which is why a knife you sharpened last month already tears tomato skin. Plastic scores instead, and after a few months you've got a grid of knife channels holding onto everything that's been cut in them, which no amount of scrubbing gets out. Solid wood avoids both problems by being softer than steel and by closing back over itself.

Why solid wood, rather than a glued-up composite
A solid board is cut from continuous timber rather than assembled from small blocks and adhesive. The practical difference is that there are no glue lines to open up. On a composite board, water gets into the joints over a few months, the glue softens, and the board starts to come apart in strips along the seams — usually right where you cut most. There are no seams here to fail.
Wood also handles knife damage differently to every other board material. The fibres part under the blade and then relax back, so a shallow cut closes rather than staying open as a permanent channel. That's why a wooden board looks essentially the same after a year of daily use, while a plastic one visibly deteriorates. The trade-off is that wood needs to be kept dry and occasionally re-oiled, which is about two minutes of work a month.
- Small (34x22x1.2cm) — the everyday board. Thin and light enough to grab one-handed for a lemon or a bit of cheese, and small enough to leave standing by the hob.
- Large (38.5x25x1.5cm) — more surface and noticeably more thickness. The extra depth is what keeps it planted on the bench when you're chopping properly rather than skating around.

What You're Getting
- One Premium Solid Wood Cutting Board in your chosen size
- Solid timber construction — no glue seams to open up along the joints
- Two sizes: Small (34x22x1.2cm) and Large (38.5x25x1.5cm)
- Kinder to knife edges than glass, stone or bamboo, because the surface is softer than the steel
- Cut marks close over rather than staying as permanent channels the way they do in plastic
- Two usable faces, so you can keep wear even and separate raw from ready
- Hand wash and dry immediately — never the dishwasher, never a soak
- Re-oil with a food-safe board or mineral oil when the surface starts to look dry and pale
