Which size do I actually cook in?

Pick by the thing you cook most often, not by the biggest meal you make twice a year. An oversized pan spreads a small amount of food too thin and it steams instead of browning — that's the mistake people make here.

Choose If this sounds like you
6" Eggs, one portion, toasting spices, melting butter. The pan you reach for at 7am and wash in ten seconds. Also the one that fits a small hob without crowding the other burners.
8" Cooking for two most nights. Two fillets, a chopped onion and garlic, a stir-fry that isn't ambitious. The size that covers about eighty percent of a normal week.
10" Family cooking, or you brown meat in batches and are sick of doing three batches. Enough floor area that things actually sear instead of sweating.

The most common pairing is a small one for eggs and a large one for everything else.

Won't everything stick to stainless steel?

No — but it will if you put cold food into a cold pan, which is what almost everyone does. Stainless is not nonstick, it's temperature-managed, and the technique takes about a week to learn and then you never think about it again.

    Do this Avoid this
Heat the empty pan first, then add oil, then add food Adding oil to a cold pan and food straight after — the classic sticking mistake
Leave protein alone until it releases on its own Prising it up early — if it grips, it isn't ready
Deglaze the browned bits with a splash of liquid while the pan is hot Plunging a screaming-hot pan into cold water, which warps bases

The step people skip is the water test. Flick a few drops into the heating pan: if they sizzle and vanish it's not ready, if they bead up and roll around like mercury it is. Add the oil at that moment and almost nothing sticks.

A pan you can actually sear in, and still keep for a decade.

Nonstick pans have a shelf life and everybody quietly accepts it. Two years in, the coating is scratched near the handle, food starts grabbing, and you replace it. Meanwhile it never gave you a proper crust on anything, because the surface that stops sticking also stops browning. Stainless goes the other way — slightly more thought at the stove, in exchange for a hard sear, a fond you can build a sauce from, and a pan that looks the same in ten years as it did in the box.

The handle is the part that decides whether you keep using it

The weak point of most stainless pans is the handle. All-metal means you are reaching for a cloth every time you move the pan; badly attached means a wobble develops and then you're cooking one-handed with a pan that pivots. The Nature Grip handle addresses the first problem — it's shaped and finished to be held directly rather than through a towel, which changes how confidently you can tilt, shake and pour.

That matters more than it sounds. Half of pan cooking is movement: tossing vegetables, tilting to pool butter, pouring off fat. If picking the pan up requires a tea towel and a plan, you stop doing any of it and just stir. A handle you can grab is what makes a pan feel like an extension of your hand rather than a piece of equipment.

    • 6" — small and light enough to hold in one hand and slide an omelette straight onto the plate. Lives at the front of the cupboard because it's used daily.
    • 8" — the middle ground and the one most people use most. Big enough to brown two portions without crowding, small enough to still handle comfortably one-handed.
    • 10" — the batch pan. Wide base means food sits in a single layer, which is the only way you get color rather than grey. Heavier, so it stays on the hob and comes to the table.
