Triple Edge or Quad Edge — do I need the extra stage?
Both bring a dull knife back. The difference is how far gone your knives are and how fussy you are about the finish. More stages means you can start coarser and end finer, in one pass down the handle.
| Choose | If this sounds like you |
|---|---|
| Triple Edge Edition | You own a chef's knife, a paring knife and a bread knife, you sharpen when the tomato starts squashing, and you want it done in thirty seconds without a decision tree. |
| Quad Edge Edition | You've got a knife that's genuinely blunt from years of neglect, or you care about the last bit of polish on the edge and want a finer finishing stage than a rescue stage can give. |
If your knives have never been sharpened since you bought them, the extra stage will earn its keep on the first evening.
Will this ruin my good knives?
A pull-through sharpener is for straight-edged kitchen knives, and it is very good at those. It's the wrong tool for a handful of specific blades, and knowing which is the whole safety question.
| Works on | Avoid |
|---|---|
| Chef's knives, santoku, paring knives, utility knives, carving knives, kitchen scissors blades — anything with a plain straight edge. | Serrated bread knives, single-bevel Japanese blades, ceramic knives, hollow-ground cleavers, anything with a scalloped edge. |
Put it on a dry worktop, hold the grip firmly with your free hand, and pull the blade toward you in slow full-length strokes — heel to tip, light pressure, three or four passes. Then wipe the blade before you use it. That wipe is the step everyone skips, and it's why the first slice off a freshly sharpened knife tastes of metal.
The tomato stops being a wrestling match.
You can tell exactly how blunt your knives are by how you cut a ripe tomato. A sharp blade drops through the skin under its own weight. A dull one skids across the surface, you press harder, and then it bursts. The same knife is also the reason chopping an onion makes your eyes stream — a blunt edge crushes cells instead of cutting them. Thirty seconds with this on a Sunday fixes both, and the difference is obvious on the first cut.

Why the grip is doing more work than the abrasives
Every pull-through sharpener has abrasive slots. What separates one that works from one that mangles your knives is whether the body stays still while you pull. If the sharpener shifts on the worktop mid-stroke, the blade goes through the slot at a slightly different angle each pass, and instead of one clean bevel you grind three overlapping ones. The edge ends up rounded rather than keen, which is worse than where you started.
A full-hand grip solves this by letting you brace the whole unit down and forward with your non-knife hand, so the sharpener is fixed and the only thing moving is the blade. The slots do the cutting, but the grip is what makes the result repeatable — and it's also what keeps your fingers a long way from the edge you're putting on.
What each edition gives you
- Triple Edge Edition — three sharpening stages in one body. Coarse to fine in a single sequence, which is all a reasonably maintained set of kitchen knives ever needs. The one to buy if you want to stop thinking about it.
- Quad Edge Edition — four stages, giving you an extra step in the progression. More recovery at the coarse end for blades that have been abused, and a finer finish at the other end for anyone who notices the difference between sharp and properly sharp.
